This fresh pear cake makes a perfect breakfast or midday snack.

Serve this cake with nonfat yogurt and honey for added protein.

3 Tbsps sugar
3 eggs (separated)
3 ½ cups low-fat Sour cream
2 Tbsps Corn starch
2 Tbsps powdered sugar
½ lemon (juice and zest)

Preparation steps

Preheat the oven to 400°F. Butter 4 fairly small oven-proof dishes and sprinkle the bases with 2 tbsp of the sugar.

Whisk the egg whites until very stiff, trickling in 1 tbsp sugar while whisking. Thoroughly mix together the egg yolks, sour cream, cornstarch, powdered sugar, and lemon zest.

Peel the pears, cut off the top section and divide the remainder into eight, lengthways. Drizzle immediately with the lemon juice.

Carefully fold the whisked egg whites into the sour cream mixture. Spoon into the dishes and smooth flat. Push the top of the pear, stalk upward, into the center of the mixture and arrange the wedges of pear around the edge, pressing lightly into the mixture.

Bake in the oven for around 20 minutes. Serve hot, dusted with powdered sugar.
