- 3 Pear
- 200 milliliters water
- 1 Tbsp lemon juice
- 125 grams Crème fraiche
- 3 egg yolks
- 3 Tbsps sugar
- 3 Tbsps ground almonds
- 1 tsp cinnamon
- Fat (for the springform pan)
- 300 grams Yeast dough (chilled, fresh dough)
Preparation steps

Peel the pears, quarter and remove the core. Cut the quarters into narrow columns. Boil the water with the lemon juice. Add the pear slices and cook for 2 minutes, then drain.
Preheat the oven to 200°C (approximately 400°F).
For the batter, mix the crème fraiche with egg yolks, sugar, almonds and cinnamon.
Grease a springform pan of 26 cm (approximately 10 inches) diameter.

Roll out the chilled dough and press evenly into the pan, creating an 3 cm (approximately 1 inch) high edge. Place the pear slices in a ring on top of the dough, then pour in the batter. Bake the pear cake on the middle rack for 25 minutes or until golden.
Serve lukewarm, garnished with petals or sprinkled with powdered sugar.
