For Melon Salsa
1 Cantaloupe (flesh removed and finely diced)
1 red chili pepper (seeded and finely sliced)
15 fresh Basil (chopped; plus extra leaves for garnish)
¼ cup extra virgin olive oil
4 Tbsps fresh Lime juice

2 tsps granulated sugar

Combine salt, cayenne pepper, paprika, coriander, and black pepper in a shallow pan or bowl. Gently press the sides of the tuna steaks into the herb and pepper mixture so that it adheres to the outside rim of the tuna.

Heat a cast iron skillet or heavy frying pan, until very hot. Add the olive oil, and sear the tuna steaks for about 2 to 3 minutes per side, or until desired doneness. Divide between plates. Serve on melon salsa with lime wedges, garnish with fresh basil leaves.

Combine cantaloupe, sliced red chili peppers, basal, olive oil, lime juice, salt, and sugar in a bowl. Spoon onto plates, top with pan-seared tuna steaks.
