500 grams small potatoes (Waxy)

1 Tbsp vegetable oil
150 grams Peas (frozen)
100 milliliters Vegetable broth
4 Halibut fillet (125 grams)

1 Tbsp clarified butter
3 Tbsps lemon juice
100 grams Whipped cream
1 Tbsp chopped Fresh herbs (such as parsley, dill)

Preparation steps

Trim broccoli, rinse and drain. Rinse scallions and cut whites into finger-length pieces. Chop scallion greens. Peel the potatoes and cook in boiling salted water until al dente. In the meantime, cook the broccoli in a steamer until al dente, rinse in ice water and drain. Cut ham into cubes and sauté the scallions in oil. Add peas, pour in broth and simmer covered for about 5 minutes. Pat halibut fillets dry and season with salt and pepper. Fry in clarified butter in a skillet until golden brown on both sides. Drizzle with lemon juice, cover and simmer until cooked through. Drain potatoes and mix with the broccoli and the peas. Stir in cream and season with the fresh herbs. Serve vegetables with the halibut fillets on plates.
