2 Tbsps soy sauce
150 grams Rice noodles
12 King prawn (peeled to the tail and deveined)
salt
freshly ground peppers
1 egg white
vegetable oil (for frying)

Preparation steps

Boil the soy sauce with about 1 liter (approximately 1 quart) of water. Add the rice noodles in, remove from heat and let soak for about 5 minutes. Drain the pasta through a colander and drain. Rinse the prawns, pat dry and season with salt and pepper. Wrap each prawn tightly with noodles. Place on a plate and allow to dry for about 15 minutes.

Meanwhile, heat the oil in a pot or in the fryer to 170°C (approximately 325°F), (it is hot enough when a wooden spoon handle is inserted into the oil and  bubbles appear).

Add the shrimp, one at a time, into the oil (be careful not to splash) and fry in batches for 2-3 minutes until golden brown. Drain on paper towels and serve.

4.

Serve with chili sauce, if desired.
