1 kilogram waxy potatoes
1 onion
clarified butter (for frying)
4 slices Bacon
salt
freshly ground peppers
1 bunch Chives

Preparation steps

1.

The day before, cook potatoes for about 20 minutes in boiling water. Peel the next day and cut into thin slices. Peel and chop onion. Heat the clarified butter in a heavy pan, add potato slices and fry over high heat, turning occasionally. Add the onion and cook until slightly softened.

Rinse chives and cut into rolls. Keep the potatoes warm in the oven.

Cut the bacon into pieces and fry in a heavy pan. Sprinkle bacon over the potatoes, sprinkle with chives and season with salt and pepper.

4.

If desired, serve with radishes, pickled pearl onions, pickles and beer.
