2 Tbsps olive oil
3 scallions
2 garlic cloves
8 eggs

Preparation steps

Preheat the oven to 180°C (approximately 350°F). Peel the potatoes, rinse and cut into thin slices. In a pan heat the oil and sauté the potato slices turning occasionally until golden brown about 10 minutes. Meanwhile, rinse and cut the spring onions into narrow rings. Remove the garlic, chop finely and add the spring onions to the potatoes.

Beat the eggs and season with salt and cayenne pepper. Pour the egg mixture over the potatoes, spread by rotating and gently tilting the pan everything evenly and let cook. Place the pan in the preheated oven and bake for 10-15 minutes.

To serve: Cut the finished frittata into pieces and serve each piece with herbs and spices as desired.
