- 2 Oranges
- 100 grams Mayonnaise
- 1 Tbsp Worcestershire sauce
- 1 splash lemon juice
- salt
- freshly ground peppers
- 2 stalks Leeks
- 4 shallots
- 2 Tbsps vegetable oil
- 400 grams King prawn (ready to cook peeled and deveined)
- 1 Tbsp freshly chopped parsley
Preparation steps
1.
Peel oranges thoroughly and cut into segments. Reserve resulting orange juice and mix in a bowl with mayonnaise and Worcestershire sauce and season with lemon juice, salt and pepper.

Rinse leeks, trim and cut into rings. Peel shallot and cut into rings. Heat 1 tablespoon oil in a pan, fry shallots slowly while stirring for about 5 minutes until light golden brown. Add leeks, cook for 3-4 minutes even and season with salt and pepper.

Rinse prawns, pat dry, fry in another pan with remaining oil for about 2 minutes and season with salt, pepper and parsley.

Mix orange segments in a bowl with prawns and vegetables and season to taste. Serve on plates drizzled with the dressing.
