1 Tbsp Sherry vinegar
250 grams Cherry tomatoes
3 garlic cloves (plus more to taste)
600 grams shrimp (peeled, deveined, tail-on)
1 Tbsp lemon juice
4 Tbsps freshly chopped parsley

Preparation steps

Preheat the oven to 200°C. Grease 4 oven-safe ramekins (or a casserole dish) with the oil. Rinse, trim, and julienne the pepper. Mix the pepper with the oil, honey and vinegar. Season to taste with salt and pepper, then place in the ramekins. Bake in the oven for 15 minutes.

Rinse and halve the tomatoes. Peel and thinly slice the garlic. Rinse the shrimp and pat dry. Heat the remaining oil in a pan, and sauté the garlic and the shrimp for 2-3 minutes, stirring constantly. Mix in the tomatoes and remove from the heat. Season to taste with salt and pepper, then drizzle with the lemon juice. Mix in the parsley, then add the mixture to the ramekins. Bake in the oven for 5 minutes, then serve.

Garnish with lemon wedges, and serve with baked potatoes.
