- 2 bunches Mirepoix (roughly chopped)
- 35 ozs Beef (e. g. haunch)
- 1 onion (quartered)
- 1 cloves
- 2 bay leaves
- 1 tsp peppercorns
- 2 tsps dried thyme
- 3 cups Red wine
- ⅜ cup Red wine vinegar
- 3 Tbsps vegetable oil
- 1 Tbsp butter
- 1 tsp Nutmeg
- 1 tsp ground cloves
- 1 tsp allspice
- ⅜ cup cream
- ½ cup Crème fraiche

1 Cutting board, 1 Peeler, 1 Small knife, 1 Citrus juicer, 1 Large knife, 1 Parchment paper, 1 Kitchen shears, 1 Brush, 1 Tablespoon, 1 Baking sheet, 1 Measuring cups, 1 Pot, 1 Whisk
Preparation steps
1.
Put the mirepoix and the meat into a bowl and add the onion, clove, bay leaves, peppercorns and thyme.

Add the red wine and the vinegar and make sure that everything is well covered by the liquid. Cover and allow to marinate overnight in the fridge.
3.
Remove the meat from the marinade and fry well on all sides in the hot oil and butter. Season with salt and ground black pepper and add the marinade. Allow to stew for approx. 90 minutes.
4.
Remove the meat from the pot and sieve the sauce. Reduce to about half, add the spices, cream and creme fraiche and season to taste.
5.
Slice the meat, replace in the sauce and serve.
