The many omega-3 fatty acids from salmon improve concentration and memory and protect against vasoconstriction and high cholesterol levels, while the proteins from the fish support muscle building and maintenance.
You can serve this with a side salad for more nutrients and with rice, potatoes, bread, or pasta for more carbohydrates.

- Ingredients
- 2 Limes (juice)
- 2 Tbsps honey
- 2 Tbsps olive oil
- 4 fresh Salmon fillet (approx.6 oz. each, chopped into bite-size pieces)
- 1 ½ cups Basmati rice
- 1 handful Chervil (chopped, reserving a few leaves to garnish)
- ⅞ cup Yogurt
Preparation steps
1.
Mix 3-4 tbsp lime juice with the honey and olive oil in a bowl. Place the salmon in this marinade and leave to marinate in the fridge for about 30 minutes.
2.
Cook the rice in twice the quantity of boiling, slightly salted water for approximately 20 minutes until done.
3.
Mix the chopped chervil with the yogurt and the remaining lime juice. Season with salt and ground black pepper.
4.
Remove the salmon from the marinade and thread onto wooden skewers. Season with salt and ground black pepper and grill for approx. 4-5 minutes. Brush occasionally with the marinade while cooking.
5.
Arrange the rice on plates, place the skewers on top, garnish with the chervil leaves, and serve with the chervil yogurt.
