- 4 fresh Salmon fillet (skinned, approx. 150 g each)
- 2 organic lemons (halved)
- 3 Tbsps olive oil
- 1 Tbsp butter
- ⅔ cup Sour cream (at least 10% fat, to serve)
- 2 tsps pickled pink Peppercorns
Preparation steps

Drizzle the salmon with 2-3 tsp lemon juice and leave to steep for 10 minutes. Pat dry and season with salt and ground black pepper.

Heat the oil and butter in a pan and fry the salmon on both sides for approx. 4-6 minutes. Remove from the pan and wrap in aluminium foil.

Fry the lemon halves in the remaining fat on a high heat until the bottom is brown.
4.
Arrange the fish on preheated plates and serve with the fried lemons and the sour cream. Garnish with red peppercorns.
