2 Tomatoes (or 200 g | 1 cup canned tomatoes; cored, chopped)
2 cloves (ground)
¾ inch cinnamon
½ tsp Cardamom
1 tsp Cumin
1 tsp Coriander
¼ cup Malt vinegar
5 cups beef Goulash (chopped into bite-sized chunks)
2 onions (diced)
2 Tbsps Ghee
4 garlic cloves (chopped)
1 tsp freshly grated ginger (grated)
2 red chili peppers (chopped)
2 ½ cups Beef broth
1 tsp brown sugar
1 tsp peppercorns
2 tsps Lime juice
To garnish

Preparation steps

Finely grind the cloves, cinnamon, cardamom, cumin and coriander in a mortar. Mix well with the vinegar and meat in a bowl, cover and leave aside for about 2 hours.

Heat the ghee in a pan and gently brown the onions. Reduce the heat, add the garlic, ginger, chilli peppers and tomatoes and leave to braise for about 2 minutes. Add the meat along with its marinade. Pour the broth into the pan, add the sugar and peppercorns, cover with a lid and braise for about 1.5- 2 hours over lower heat.

If necessary, add some water and finally season with salt and lime juice. Garnish with parsley leaves to serve.
