Ingredients

For the onions
2 Red onions
2 Tbsps butter
1 Tbsp sugar
1 Tbsp dark balsamic vinegar
3 Tbsps dry Red wine
salt
freshly ground peppers

100 grams Goat cheese
1 Tbsp clarified butter
4 plates Puff pastry dough (frozen)
1 egg white
In addition
½ bunch Arugula
50 grams chopped Walnut

Preparation steps

1.

Peel onions, cut in half and cut lengthwise into thin strips. Heat butter and sugar in a saucepan and caramelize slightly. Add onions and saute for a few minutes. Deglaze pan with red wine vinegar and season with salt and pepper.

Cut goat cheese into 1.5 cm slices (approximately 1/2 inch). Heat butter in a pan and sear cheese on both sides. Roll out pastry and cut into squares (10 x 10 cm) (approximately 4 x 4 inch). Cut strips out of remaining pastry.  

3.

Brush pastry strips with beaten egg and arrange on the edges of pastry squares. Bake in preheated oven at 200°C (approximately 400°F) for 15-20 minutes or until golden. Spread onions inside the squares and top with goat cheese slices. Garnish with arugula and walnuts and serve.
