- 100 grams sugar
- 2 Pear
- 1 Tbsp Truffle oil
- 2 Tbsps grapeseed oil
- 2 Tbsps White vinegar
- 2 Tbsps lemon juice
- 1 tsp honey
- salt
- white peppers
- 300 grams Goat cheese
Preparation steps

Preheat the oven to 100 ° C convection.

Combine sugar with about 100 ml (approximately 2/5 cup) of water and bring to a boil. Simmer for about 5 minutes on low heat until syrupy. Remove from heat and let cool slightly. Rinse one pear and cut into slices. Place into syrup ad let stand for about 5 minutes. Remove with a slotted spoon and arrange on a lined with parchment paper baking sheet. Dry in preheated oven at 100°C (approximately 200°F) for about 1.5-2 hours.

Whisk both oils with vinegar, lemon juice and honey, season with salt and pepper. Peel second pear, halve and core, slice thinly. Layer, slightly overlapping, on plates. Top with sliced cheese and drizzle with vinaigrette. Garnish with pear chips and serve.
