Besides beef, chilli plays the main role in this dish and is called proper. The capsaicin contained in the chillies stimulates the metabolism and can even boost fat burning and stimulate the intestines. Also good to know: The resulting spiciness ensures that the body releases endorphins and thus makes you happy.
Depending on your preferences, some of the meat can also be replaced by red peppers - this automatically puts more vegetables on your plate and even saves you money.

- 600 grams Goulash (mixed)
- 150 grams onions
- 2 bunches Soup vegetables (such as carrot, leek, parsnip or other aromatic vegetables such as celery or onion)
- 2 Tbsps Lard
- 1 Tbsp Caraway
- 1 Tbsp thyme
- 1 Tbsp ground paprika
- 1 ½ liters Broth
- 1 kilogram potatoes
- 200 grams white Beans (Soaked in 1 L of water the day before)
- 1 Tbsp vegetable oil
- 1 chili pepper
- 2 sprigs Tarragon
- 4 Lettuce (for garnish)
Preparation steps
Rinse chile pepper, cut lengthwise, remove seeds, remove ribs and finely chop. Rinse soup vegetables and peel onions. Dice soup vegetables and onions into small cubes and sauté with the stew meat in a large pot in oil. Season meat with salt, pepper and paprika.
Pour in broth, caraway seeds and thyme and simmer over low heat for about an hour. Peel potatoes and cut into cubes. About 25 minutes before end of cooking, add potatoes to the stew and continue to simmer. Add drained beans about 15 minutes before end of cooking. When everything is tender, season with tarragon, salt and pepper. Serve in bowls, garnished with lettuce leaves.
