- 8 salad Tomatoes (with bottoms leveled-off and tops removed)
- 1 ¼ cups Couscous
- 2 ½ cups chicken stock (hot)
- ⅜ cup olive oil
- ½ lemon (juiced)
- onions (finely sliced)
- 4 Tbsps parsley (finely chopped)
- parsley (to garnish)
- salt
- Black pepper
Preparation steps
1.
Scoop out the insides of the tomatoes and reserve the hollow tomatoes to one side.

Place the couscous in a large heatproof bowl. Bring the stock to a boil in a saucepan over a medium-high heat. Pour the stock over the couscous then cover the bowl with clingfilm.
3.
Allow to sit for 5 minutes until the stock has been absorbed. Remove the clingfilm and fluff the grains with fork and then stir in the olive oil, onion, lemon juice and chopped parsley. Season to taste and spoon into the tomatoes.
4.
Garnish with the sprigs of parsley and some more black pepper on top.
