1 tsp grated Orange peel
3 Tbsps sugar
4 ozs milk
2 Tbsps butter
5 tsps Pastry flour
3 egg whites
2 egg yolks

Preparation steps

1.

Brush 4 soufflé cups (each 125 ml/approximately 4 ounces) with butter.

Preheat the oven to 200°C / 400°F. Add 2 cm (approximately 3/4 inch) water to a large, shallow pan for a waterbath and place on a rack in the middle of the oven.

Melt butter, stir in flour, pour in milk, and bring to a boil while stirring. Remove from heat and stir in 1 egg white and 5 teaspoons of sugar. Allow to cool slightly, then stir in egg yolks, 30 chopped almonds, orange peel, and Grand Marnier.

Whisk the remaining 2 egg whites with 5 teaspoons of sugar until stiff and fold into the batter.

Fill the soufflé cups with batter to approximately 1/3 inch below the rim, sprinkle  the tops with the remaining chopped toasted almonds, put into the waterbath and bake about 20 minutes. Serve immediately.
