2 Tbsps slivered almonds (roasted)

Preparation steps

1.

Rinse the grapes and cut in half.

Peel, quarter, and remove the core from the apples. Slice thinly and mix with 1 tablespoon of lemon juice. Drizzle with the maple syrup.

Mix the yolks with the remaining lemon juice, sugar, and cinnamon. Whisk in a bowl over a hot water bath until thickened, and then gradually incorporate the apple juice.

4.

Top the grape salad with the sauce, and garnish by sprinkling with almonds.
