1 Cucumber (1/3 finely sliced, the remainder peeled, deseeded and grated)
¾ cup Quark
1 cup Greek yogurt
1 Tbsp lemon juice
3 Tbsps olive oil
4 cloves garlic cloves (crushed)
2 ⅔ cups turkey breasts (finely sliced)
1 tsp dried thyme
1 tsp dried oregano
4 Pita bread (or crusty rolls)
1 lemon (cut into wedges)
4 sprigs mint
½ cup black Olives

Preparation steps

1.
Mix together the grated cucumber (reserving a little for garnish), quark, yoghurt, lemon juice and 1 tbsp oil. Add the garlic and season with salt and ground black pepper.

Mix the turkey with the thyme and oregano and season with salt and ground black pepper. Heat the remaining oil and fry the turkey, stirring, for approx. 4 minutes.
3.
Slice the breads open (toast briefly if desired) and fill with cucumber slices, turkey, tzatziki and the reserved grated cucumber. Garnish with lemon wedges, sprigs of mint and olives before serving.
