- 50 grams Pine nuts
- 500 grams green Beans
- 2 handfuls Chives
- 10 eggs
- 2 Tbsps Whipped cream
- 40 grams grated Emmentaler cheese
- salt
- freshly ground peppers
- 4 Tbsps sunflower oil
Preparation steps
Toast the pine nuts in a dry pan until golden brown.
Rinse the beans and trim the ends. Cook in boiling, salted water for about 6 minutes. Meanwhile, rinse the chives and pat dry. Drain the beans and rinse under cold water. Wrap 3-4 of the beans together with one of the chives. Continue with the remaining beans. Chop the remaining chives into small rings.
Whisk the eggs, heavy cream and Emmentaler cheese together. Season with salt and pepper. Heat 1 tablespoon of oil in a rectangular pan and pour about 1/4 of the egg mixture in. Evenly distribute a few of the bean parcels and about 1/4 of the toasted pine nuts on top. Cook for about 4 minutes, until the eggs have set. Remove from pan and keep warm. Repeat with the remaining ingredients. Serve garnished with the chopped chives.
