Preparation steps

Rinse the tomatoes and blanch in boiling water. Remove then peel, halve, remove the seeds, and dice small. Peel the garlic and crush with a little salt into a smooth paste. Mix the tomatoes, garlic, parsley, 4 tablespoons of olive oil, and lemon juice. Season to taste with salt and pepper, and set aside for at least 15 minutes.

Rinse the calamari, pat dry, and cut into thick rings. Leave the tentacles while. Place on a preheated grill (charcoal or electric), and grill on all sides for 3-4 minutes. Remove from the grill and mix with the tomato mixture, then serve immediately. Serve with fresh, crusty white bread.
