600 grams Beef fillet (ccenter-cut, ready to cook)
4 Tbsps olive oil
1 sprig rosemary
3 garlic cloves
coarse Sea salt
freshly ground peppers

Preparation steps

Rinse beef, pat dry and tie with kitchen string if desired. Brush with oil on all sides. Rinse rosemary and press garlic cloves through a garlic press.

Rub beef with garlic and rosemary. Place beef on a grill heated to 120°C (approximately 250°F) over indirect heat. Close grill and cook about 25 minutes, turning meat regularly so that all sides cook evenly. Wrap in aluminum foil and let rest 5 minutes. Remove foil, season with salt and pepper and serve.
