Preparation steps

Rinse the lamb and pat dry. Peel, chop, and crush the garlic into a paste using the salt. Mix the yogurt and the herbs. Transfer the lamb to a bowl, rub the lamb with the yogurt mixture, then cover with plastic wrap and refrigerate overnight to marinate.

Skewer the lamb, tie with butcher's twine, and season with salt and pepper. Grill for 50-60 minutes, and then serve on a plate.
