Preparation steps

1.

Rinse mackerel and pat dry. Season insides with salt and pepper. Rinse herbs and pat dry. Stuff the cavity of each fish with a sprig of rosemary and 3-4 sprigs thyme.

2.

Brush skin with oil and season lightly with salt and pepper. Wrap each mackerel with two slices of bacon and place on a hot grill. Grill, turning occasionally, about 10 minutes.
