- 8 Salmon cutlets (à 120 g)
- 50 milliliters olive oil (plus more for grill grates)
- 1 tsp Fresh herbs
- 1 Lime (zested and juiced)
- freshly ground peppers
- salt
- 2 handfuls young Sorrel
Preparation steps

Heat a grill to medium and lightly oil the grates. Rinse the salmon and pat dry. In a bowl, stir together the olive oil, herbs, lime zest and juice and some pepper and brush on the salmon cutlets. Grill 3-4 minutes on each side, brushing occasionally with the marinade. Sprinkle with salt.

Rinse, and drain well the sorrel. Transfer to plates and place the salmon steaks on top.

If desires, serve with herb butter.
