For the salmon
2 Tbsps freshly chopped Fresh herbs (such as parsley, dill, chervil, thyme, sage, etc.)
100 grams butter
125 grams day-old white bread (crustless)
4 Salmon steak (with skin,each about 200 grams)
2 Tbsps lemon juice
salt
freshly ground peppers
Pastry flour
2 Tbsps vegetable oil
For the salad
2 Lettuce
Fresh herbs (to taste, such as tarragon. marjoram)
80 grams red, pickled paprika (from a jar)
For the dressing
3 Tbsps Vinegar
4 Tbsps olive oil
1 tsp Mustard
salt
freshly ground peppers
In addition
1 fresh lemon (cut into wedges)

Preparation steps

For the salmon: combine chopped herbs with crumbled white bread, add butter and process until crumbly. Rinse salmon steaks, pat dry and drizzle with lemon juice. Season with salt and pepper and coat with flour. Heat oil in a pan and cook salmon until golden brown on both sides.Remove and coat with herb mixture. Place into a baking dish and bake in preheated oven at 220°C (approximately 425°F) for about 10 minutes. Turn off oven heat and let stand for about 3 minutes.

For the salad: tear apart lettuce, rinse and shake dry. Tear into small pieces. Rinse herbs, shake dry and mix with lettuce. Cut peppers into small pieces and add to salad. For the dressing: combine all ingredients and mix well. Arrange fish with salad on plates, drizzle with the dressing and garnish with lemon wedges. Serve.
