Preparation steps

Peel the mango and melon and dice the flesh. Peel the shallot and chop finely. Rinse the chile, cut in half, remove the stem and seeds and chop finely. Rinse the cilantro, shake dry, set a few leaves aside for garnish and finely chop the remaining leaves. Toss the mango, melon, shallot, chile and chopped cilantro together, season with lime juice, sugar, salt and pepper and then arrange on serving plates.

Rinse the shrimp, pat dry and grill for 2-3 minutes per side. Serve over the salad.
