- 2 ripe Mangoes
- 24 Cherry tomatoes
- several branches Lemon thyme
- soy sauce
- vegetable oil
- 12 Skewers
Preparation steps
1.
Rinse shrimp, peel down to tail segment, devein, rinse and pat dry. Peel mangos.Cut mango fruit from core and dice. Rinse cherry tomatoes and pat dry.

Rinse lemon thyme sprigs and pat dry. Alternately stick mango cubes, tomatoes, shrimps and thyme sprigs on 12 skewers and sprinkle with soy sauce. Drizzle skewers with oil, cook under a preheated oven broiler, watching carefully, until golden brown and season with salt and pepper. Serve immediately. Serve with mango chutney if desired.
