Ingredients

For the orange sauce
4 Tbsps sugar
1 Tbsp butter
50 milliliters Whipped cream
150 milliliters Orange juice
For the mixed grain couscous
6 Tbsps Three grain mix (such as oats, wheat, millet and rye)
salt
150 grams Couscous
1 Tbsp freshly chopped parsley
1 Tbsp finely chopped, mixed Nut (such as almonds, hazelnuts and walnuts)
2 Tbsps balsamic vinegar
freshly ground peppers
For the shrimp
8 King prawn (ready to cook, peeled and deveined)
1 Tbsp parsley
1 garlic clove

Preparation steps

For the orange sauce: Caramelize the sugar in a deep saucepan, stir in the butter then carefully stir in the cream and orange juice. Reduce the heat and let the liquid boil down until syrupy. Remove from the heat and let cool.

For the mixed grain couscous: Rinse the grains and cook for 25-30 minutes in boiling salted water.

Add the couscous for the last 10 minutes. Drain the mixture, transfer to a bowl and toss with the parsley, nuts, balsamic vinegar and 2 tablespoons olive oil. Season with salt and pepper.

For the shrimp: Rinse the shrimp, pat dry, season with salt and pepper, sprinkle with lemon juice and sear in a hot frying pan with a little oil for 1-2 minutes per side. Add the parsley leaves and minced garlic and toss to combine.

5.

Fill 4 rinsed ramekins with the mixed grain couscous, packing the mixture in firmly, then invert onto serving plates. Arrange the shrimp on top and serve garnished with orange sauce.
