125 milliliters olive oil
3 bay leaves

1 Swordfish
2 green Bell pepper
2 onions

Preparation steps

1.

Peel shallot and garlic. Finely chop shallot and press garlic through a garlic press.

2.

Mix all ingredients for the marinade together.

3.

Cut swordfish into 3 cm (approximately 1 inch) pieces. Combine with marinade and marinate about 2 hours. 

4.

Peel onions and cut lengthwise into slices.

5.

Rinse and halve peppers, remove seeds and ribs and cut into bite-sized pieces.

6.

Rinse, core and remove seeds from tomatoes. Cut into quarters.

7.

Thread swordfish pieces alternately with vegetables onto skewers. Place skewers on a hot grill. Cook, brushing frequently with marinade, about 8 minutes.
