- 1 large Zucchini
- 4 red and yellow Bell pepper
- 200 grams large button Mushroom
- 1 garlic clove
- 1 lemon (juice)
- 80 milliliters olive oil
- salt
- freshly ground peppers
- 2 Tbsps finely chopped parsley
Preparation steps

For the skewers: Rinse the zucchini, cut in half lengthwise and cut into 1 cm (approximately 1/4 inch) slices. Rinse the bell peppers, cut in half lengthwise, remove seeds and white ribs, and cut into bite-size pieces. Wipe the mushrooms with a damp paper towel and quarter. Thread the vegetables onto 12 wooden skewers, alternating each kind.

For the marinade: Peel and press the garlic. In a bowl, whisk the lemon juice with the oil, and season with salt and pepper to taste. Brush the skewers with the oil mixture. Cook on a preheated grill for 6 minutes.

For serving: Remove the skewers from the grill and drizzle with the remaining marinade. Serve garnished with parsley.
