4 centiliters Calvados
1 lemon (juiced)
3 Tbsps honey
cilantro (ground)
freshly ground peppers
12 slices ham (such as prosciutto)
40 grams chopped Walnut

Preparation steps

1.

Peel, quarter and remove cores from apples, then finely dice. In a pot, combine apples with aniseed, Calvados, lemon juice and 2 tablespoons honey. Bring to a boil. Remove from the heat and let cool to room temperature. Season with coriander and pepper.

Place apples (without liquid) in the center of each slice of ham and roll up. Place 3 ham rolls on each plate. Bring remaining cooking liquid to a boil again and and cook until syrupy. Stir in remaining honey and drizzle sauce over rolls. Serve sprinkled with chopped walnuts.
