1 kilogram Salsify
salt
150 grams ham (such as Parma ham)
1 handful parsley
50 grams Walnut
1 lemon (juice)
1 tsp honey
100 milliliters olive oil
peppers (freshly ground)
freshly grated Parmesan (for garnish)

Preparation steps

1.

For the salsify: Peel and boil the salsify in a pot of boiling salted water until tender, about 20 minutes. Drain and allow to cool until lukewarm. Wrap each piece of salsify with a slice of ham.

2.

For the pesto: Rinse the parsley, pat dry, pluck the leaves and finely chop. Finely chop the walnuts. Stir the parsley with the walnuts, lemon juice, honey and oil. Season with salt and pepper. 

3.

For serving: Arrange the salsify on plates and drizzle with a little of the herb and walnut pesto. Serve the rest of the pesto on the side. Garnish the salsify with the parmesan.
