Preparation steps

1.

Remove the stems from the chiles and tear into pieces. Soak in warm water until soft (about 20 minutes). Drain and pound until crushed with a mortar and pestle. 

2.

Add the garlic and mash with a little salt. Add the spices then stir in olive oil and mash until the mixture forms a paste. Transfer to a jar, cover with olive oil and store in the refrigerator.

3.

Will keep in the refrigerator for up to 6 weeks.
