200 grams dried Fruit (such as figs, dates, prunes, raisins, etc.)
40 grams diced candied orange
40 grams diced Candied lemon
250 milliliters lukewarm Apple juice
100 grams Walnut
100 grams blanched almonds
300 grams Pastry flour
300 grams Rye flour
1 pinch salt
1 cube fresh Yeast 42 g (approximately 1.5 ounces)
1 Tbsp sugar
1 tsp Ground cinnamon
¼ tsp ground anise seed
¼ tsp Ground allspice
¼ tsp Fennel powder
2 Tbsps honey
150 grams Apricot jam
4 candied Cherries (for garnish)
assorted Fruit gummy (for garnish)

Preparation steps

Dice the dried fruit and soak in the lukewarm apple juice.

Toast the walnuts and almonds in a dry skillet. Remove from heat, set half aside and coarsely chop the other half.

Mix the two flours and salt in a large bowl and make a well in the center. Crumble the yeast into the well and mix with 1 tablespoon of sugar and 50 ml (approximately 1/4 cup) of lukewarm water. Cover and let stand for about 15 minutes. Stir in another 200-250 ml of warm water, the spices, honey, well-drained dried fruit and chopped nuts. Then another 200-250 ml (approximately 3/4-1 cup) of water, the spices, honey, well drained dried fruit, candied orange and lemon peel and chopped nuts. Knead to form a smooth dough, adding more flour or water if the dough is too sticky or dry. Transfer to a floured surface and knead for about 10 minutes. Cover and let rise for 1 hour.

Preheat the oven to 200°C (approximately 400°F).

Knead the dough a few times and divide into 4 equal portions. Press the dough into 4 well greased, heart shaped ramekins. Bake for 45 minutes, remove from the oven and brush with the apricot jam. Allow to cool completely and garnish with the candied cherries and assorted gummy candies.
