200 grams white, dried Beans
400 grams starchy potatoes
2 carrots
1 onion
1 garlic clove

Preparation steps

Soak beans overnight in a bowl of water. The next day, drain beans and combine with water to cover in a large pot. Simmer until softened, about 1 hour. Peel and dice potatoes, carrots, onion and garlic. After beans have cooked 30 minutes, add vegetables. Season with salt and pepper.

Rinse and halve pepper, remove seeds and ribs and chop. Add pepper to soup during the last 15 minutes of cooking time. With a potato masher, roughly mash vegetables. Cut sausage into slices and add to soup along with thyme. Simmer until hot, season to taste, and serve.
