1 handful parsley

1 Muffin tin or 12 paper muffin tins

Preparation steps

1.

To prepare leek, clean, wash, lengthwise halve and cut into fine strips. Cut salmon into strips.

2.

Mix eggs with oil, milk, and yogurt until well blended. Wash thyme and parsley, shake dry, pluck leaves, and chop. Add herbs to the egg mixture and season with salt and pepper.

3.

Mix baking powder with flour and fold into the egg and herb mixture. Chop the walnuts and carefully fold them into the mixture with the leek and salmon strips. Grease the muffin tins as required and distribute the mixture evenly over 12 tins. Bake in a preheated oven at 400 °F for about 25 minutes.
