2 scallions
2 eggs
1 splash mineral water
1 bunch mixed Fresh herbs (such as chives, parsley and dill)
50 grams Goat cheese
Sea salt

Preparation steps

Whisk the eggs and mineral water.

Rinse the herbs, pat dry and finely chop.

3.

Rinse, trim and cut the scallions into rings. Put the scallions and herbs in a pan with hot oil, spread evenly in the pan and add egg mixture. Season with salt and pepper and spread sliced goat cheese over the top. Cover and cook for about 3-4 minutes until lightly golden and the cheese is melted.
