- 1 shallot
- 100 milliliters Vegetable broth
- 3 Tbsps White vinegar
- 2 Tbsps spicy Mustard
- salt
- peppers
- 1 pinch sugar
- 100 milliliters Canola oil
- 4 Tbsps finely chopped Fresh herbs (such as chives, parsley, mint)
Preparation steps

Peel and finely dice the shallot. Mix the broth with the vinegar, shallots, and the mustard in a bowl. Season to taste with salt, pepper, and sugar.

Whisk well until the sugar and salt have dissolved. Gradually incorporate the oil, stirring constantly. Add enough oil until a thick dressing has formed. Mix in the herbs, season to taste, and serve.
