1 organic lemon
8 trout

1 bunch parsley
2 bunches Arugula
1 bunch scallions
2 Tbsps vegetable oil
Lemon wedge (for garnishing)

Preparation steps

1.

Rinse and pat dry fish fillets, drizzle with lemon juice and season with salt and pepper.

Chop parsley and arugula. Rinse and dry scallions, cut into rings. Season herbs with salt and pepper.  

3.

Lightly grease 4 pieces of parchment paper with oil.

Place 2 fish fillets on each paper piece and spread with herbs. Fold in paper, sealing tightly, and bake in preheated oven at 180°C (approximately 350°F) for about 20 minutes. Remove from the oven and unfold carefully. Garnish with lemon wedges and serve.
