- For the gravy
- turkey Giblets
- 5 cups water
- 1 bay leaf
- 1 sprig thyme
- 4 black peppercorns
- ½ onion (sliced)
- pan juice (from the roast turkey)
- 1 Tbsp all-purpose flour
- salt

- For the bread sauce
- 1 medium-sized onion (quartered)
- 4 whole cloves
- 2 ½ cups milk
- 2 Mace (whole blade)
- 1 pinch grated Nutmeg
- 5 black peppercorns
- 2 bay leaves (crushed)
- 2 cups fresh, white breadcrumbs
- 2 Tbsps cream
- 2 ½ Tbsps butter

- For the cranberry sauce
- 2.333 cups Cranberry
- ¾ cup caster sugar
- ⅔ cup Red wine
- ⅔ cup Orange juice
Preparation steps
1.
For the gravy: place the giblets in a pan and cover with the water. Add the bay leaf, thyme, peppercorns and onion.

Bring to a boil and skim off any scum. Reduce the heat and simmer for 45 minutes.

Stir the flour into the turkey juices in a pan and heat gently, stirring until golden brown and smooth texture.

Remove from the heat and pour in the hot stock. Stir well and return to the heat and boil for 3-4 minutes, stirring all the time until the gravy thickens. Season to taste and serve.

For the bread sauce: stud the onion with the cloves. Put into a pan with the milk, spices and bay leaves and heat very gently until the milk comes to a boil.

Remove from the heat, cover the pan and leave to stand for 4-5 hours. Strain the milk into a bowl and return to the pan.

Add the breadcrumbs and heat very gently for about 20 minutes, stirring occasionally, until the breadcrumbs have swollen. Beat well until smooth.
8.
Stir in the cream and butter until piping hot. Season to taste with nutmeg, salt and pepper just before serving.
9.
For the cranberry sauce: put the cranberries, sugar, wine and orange juice into a pan and heat gently until the sugar has dissolved.
10.
Bring to a boil and simmer, uncovered for 20-30 minutes, stirring from time to time.
