- 2 egg yolks
- salt
- 1 tsp spicy Mustard
- 250 milliliters neutral vegetable oil (such as sunflower or corn oil)
- ½ lemon
Preparation steps
Step 1
Gather all the ingredients onto your workspace. Measure the oil, and place in a small carafe.
Step 2
Separate the eggs. You can do this by breaking the eggs on the edge of a bowl. Move the egg back and forth between the two shells, until all of the egg white has drained into a small bowl. Be careful not to break the yolk during the process.
Step 3
Keep the egg yolks in a separate bowl. Break the egg and follow the same process for the second egg.
Step 4
Season the yolks with a pinch of salt.
Step 5
Add the mustard to the egg yolks.
Step 6
Whisk together the seasoned egg yolks with the mustard until thoroughly combined.
Step 7
Start to add the oil, starting with a drop at a time. Whisk until combined. Gradually increase the amount of oil, whisking constantly, making sure that the oil is incorporated before adding more.
Step 8
The mayonnaise should have a nice shine, as well as being thick and creamy. Squeeze the juice from half of a lemon using a juicer.
Step 9
Stir 1-2 tablespoons of lemon juice into the mayonnaise, and season to taste.
Step 10
The mayonnaise can be used now however you'd like. For example, it can be used for a sauce for fries, or asa component in a salad dressing.
