150 grams dried Apricot
1 stale White roll
2 bunches scallions
2 Red chili peppers
2 shallots
3 garlic cloves
1 Tbsp butter
75 grams Cashews
3 eggs
750 grams Ground beef
½ tsp cinnamon
¼ Ground clove
½ tsp freshly grated ginger
salt
freshly ground peppers
vegetable oil (and butter for frying)
100 milliliters instant Vegetable broth
1 Tbsp honey

Preparation steps

1.

Remove 5 apricots and cut into thin slices and set aside. Finely chop remaining apricots. In a small bowl, mix chopped apricots, orange liqueur and 50 ml (approximately 1/4 cup) warm water. Set aside.

Soak roll in a bowl of lukewarm water.

Rinse scallions, wipe dry and cut into pieces, about  8-10 cm (approximately 3-4 inches) long. Rinse chile peppers, cut lengthwise and remove seeds and finely chop. Peel shallots and garlic. Finely chop shallots.

Heat butter in a pan and sauté shallots in hot butter until translucent. Squeeze garlic through a press into pan, stir and cook briefly.

Toast cashews in a dry pan, pour onto a plate to cool, then chop coarsely.

Squeeze excess water from roll. Mix roll, chile peppers, shallots, garlic, chopped apricots, cashew, eggs and ground beef. Season with cinnamon, cloves, ginger, salt and pepper. Stir together until mixture is smooth.

With damp hands, shape meat mixture into a loaf and place in greased pan. Brush loaf with oil and arrange apricot slices decoratively on top. Bake in preheated oven at 200°C (approximately 400°F) for about 45 minutes. Add scallion and broth about 10 minutes before end of cooking time. Brush meatloaf with honey and return to oven until cooking time is complete. To serve, cut into slices.
