- For the chicken
- 4 Chicken breasts (skinless, with wing bones)
- 1 Tbsp honey
- 1 organic Lime (zested and juiced)
- cayenne pepper
- 1 garlic clove (peeled and pressed)
- For the sauce
- 1 Tbsp olive oil
- 1 shallot (chopped)
- 1 garlic clove (peeled and pressed)
- 2 red chili peppers (cored and minced)
- 1 organic Lime (zested and juiced)
- 2 ripe Mangoes (peeled and minced)
- 1 Tbsp honey
- 2 Tbsps fresh cilantro (chopped)
- salt
- freshly ground peppers
Preparation steps
1.
For the chicken: Combine honey, lime zest, lime juice, cayenne pepper and garlic. Place chicken in mixture and marinate for about 20 minutes.

Preheat the oven to 200°C (approximately 400°F).

Place marinated chicken on a baking sheet and roast for about 15 minutes, until golden brown.

For the sauce: Heat oil in a pan and cook shallot and garlic. Add chiles, lime zest and juice and cook for about 5 minutes. Then add mango, honey and cilantro and cook for another 2-3 minutes. Season with salt and pepper, to taste.
5.
Plate chicken breast and serve drizzled with sauce.
