- For the doughnuts
- 3.333 cups self-rising flour (plus extra for dusting)
- 1 tsp Baking powder
- 0.333 cup caster sugar
- 2 eggs
- 2 Tbsps sunflower oil
- ⅞ cup milk
- vegetable oil (for deep frying)
- For the icing
- 3 ¼ cups powdered sugar
- water

Sift the flour and baking powder into a bowl and stir in the sugar.

Beat together the eggs, oil and milk and add to the dry ingredients, mixing well to soft dough. Shape into a smooth ball and then turn out on to a floured work surface.

Roll out the dough to a thickness of about 1cm|1/2" thickness. Flour a cutter and cut out rounds, then cut out the centres using a smaller cutter. Re-roll the trimmings to make more doughnuts.

Heat the oil in a deep pan and cook the doughnut rings 2-3 at a time for 3-4 minutes, until golden, then turn them over and cook for a further 2-3 minutes, until golden and cooked through. Drain on absorbent kitchen paper. Leave to cool.
5.
For the icing: sift the icing sugar into a bowl and beat in enough water to give a smooth thick icing. Dip one side of the doughnuts in the icing and leave to set.
