- ¾ cup Brown rice flour
- ¼ cup sweet rice flour
- ¾ cup white Rice flour (plus extra for dusting)
- ½ cup Potato starch
- 0.333 cup Tapioca starch
- ½ tsp salt
- ¼ tsp cream of tartar
- 4 tsps sugar
- 2 tsps active dry yeast
- 0.333 cup Coconut milk
- 1 tsp Cider vinegar
- 2 Tbsps Coconut oil (melted)
- 2 eggs (beaten)
- ½ cup warm water
- 3 Tbsps vegetable oil (for frying,)
Preparation steps

Combine the dry ingredients in a food processor with the dough blade until combined.

Add the coconut milk, vinegar, coconut oil and eggs and blend until combined.

With the machine running, slowly add the water and blend for 3 minutes. The mixture should pull away from the sides of the bowl - if not add more rice flour.

Remove the dough from the bowl and form into a ball. Place in a bowl, cover with a tea towel and leave to rise in a warm place for 30-40 minutes until almost doubled in size.

Cut the dough ball into 8 sections and cover with the tea towel to keep from drying out.

Heat a griddle or heavy-based frying pan until very hot, then add about 1 teaspoon of the vegetable oil.

Place 1 piece of the dough onto a floured surface and knead for a few seconds. Roll into a rough ball and place cling film over the top. Roll out to a round about 5mm|¼" thick.
8.
Peel off the cling film and place the dough in the hot pan. Cook for about 1 1/2 minutes until the base is golden. Turn over and cook for about 30 seconds until browned and cooked through.
9.
Repeat with the remaining dough, adding more oil to the pan each time.
