250 grams Broad bean (frozen)
4 Plum tomato
2 Anchovy fillet
1 Tbsp Caper
3 Tbsps button Mushroom (canned)
1 onion (small)
1 handful Basil
salt

1 lemon
4 Tbsps olive oil

Preparation steps

1.

Thaw the beans and blanch in boiling salted water, immediately plunge into ice water, then drain well. Rinse and halve the tomatoes, remove stems and cut into slices.

2.

Finely chop the anchovies,capers and mushrooms. Peel the onion and finely chop. Rinse the basil and shake dry.

3.

Combine everything together and stir to mix. Arrange on serving plates. Sprinkle with salt and pepper. Halve the lemon and squeeze out the juice. Mix the juice with the oil and drizzle over the salads. Serve immediately.
