- 1 chicken (about 1.2 kg)
- salt

- olive oil
- 1 onion
- 1 garlic clove
- 2 Oranges (juiced)
- 150 milliliters dry white wine
- 350 milliliters Chicken broth
- 2 Tbsps Orange marmalade
- 3 sprigs rosemary
- 50 grams black Olives (pitted)
- rosemary (for garnish)
Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Rinse the chicken, pat dry and cut into 8 pieces. Season with salt and pepper and brown in 1-2 tablespoons hot oil in a roasting pan. Remove from the pan. Peel and finely chop the onion and garlic and sauté in the pan with 1 tablespoon oil. Pour in the orange juice and the wine. Add some broth, place the chicken pieces in the pan skin side up and spread the marmalade over them. Sprinkle with rosemary and olives and bake for about 30 minutes in the oven. Add more broth as needed and baste the chicken occasionally with the sauce in the pan. Broil for the last 5 minutes if desired.

Season the sauce with salt and pepper and serve garnished with fresh rosemary.
