Japanese Chicken Skewers

- 600 grams Chicken breasts
- 3 Lettuce
- 2 red Bell pepper
- 3 Kiwi
- ½ honeydew melon
- 2 sprigs mint
- 60 milliliters Sake (Rice wine)
- 4 Tbsps soy sauce
- 60 milliliters Mirin
- 1 Tbsp sugar
- 3 Tbsps Rice vinegar
- 2 Tbsps honey
- 30 milliliters Canola oil
- 20 milliliters sesame oil
- salt
- freshly ground peppers
Preparation steps
Rinse the chicken, pat dry with paper towels, and cut into cubes. Place the chicken onto 8 wooden skewers. Rinse, trim, and chop the lettuce. Rinse, trim, and finely dice the peppers. Rinse and ddice the kiwis.
Scoop the flesh of the melon into balls. Rinse and dry the mint, then remove the leaves from the stems. Mix together the sake, soy sauce, mirin, and the sugar. Warm the soy sauce mixture until the sugar has disolved.
Mix the rice vinegar, honey, canola oil, and sesame oil to form a dressing. Season to taste with salt and pepper. Mix the lettuce with the peppers, mint, and fruit. Heat a grill pan, and cook the skewers on all sides, for 6-8 minutes. Brush regularly with the sake mixture. Season the skewers with the pepper. Arrange the salad on plates, and top with the chicken skewers. Drizzle with the dressing and serve.
